Do you remember when the Atkins diet was hot, hot, hot? Then it kind of fizzled. I think because it was too complicated- I mean, you needed a whole book to follow it and ain’t nobody got time for that.
My husband and I recently did the low carb thing, and I don’t mean just cutting out pizza and pasta. We went the whole 20g carbs or less per day. I was the definition of HANGRY at first until my body adjusted and I figured out how to stay full without cramming a baguette in my face.

I am not crazy-strict anymore but my husband still is so I try to create low carb dinners that aren’t just a big piece of meat on a plate. So far, he has lost around 75 lbs by just cutting out carbs. My mom tried it for a couple weeks and lost 6 lbs. It isn’t for everyone, but the lifestyle seems to work for my family.

If you saw my first post about Home Chef, I made Jalapeño Popper-Stuffed Pork Tenderloin with a simply dressed side salad. My family loved it so much I bought the same ingredients to make it the following week (although it actually cost more to buy the ingredients at the grocery store- I had to buy whole bottles/packages vs. Home Chef’s pre-portioned ingredients).
My second low carb meal was equally amazing- Steak au Poivre with Cauliflower Gratin and Green Beans. What I loved about this meal was the simplicity- the sides were prepared with natural, identifiable ingredients that enhanced the flavor of the vegetables.
I wasn’t able to make the meal right away after delivery, but even 6 days after it arrived it was still incredibly fresh! The step-by-step photos in the instruction page helped me figure out how to blanch the beans (a first in my world) and create a gratin with cauliflower (my mom used to make potatoes au gratin in the past…this was just as scrumptious with a LOT less carbs).
I am putting both of these recipes on repeat in our dinner rotation- the binder they send with ingredient and recipe info is perfect to remind me how to prepare the meals, and I can double or triple them next time for a dinner party.
