10 Gourmet Ice Cream Sandwich Ideas

I was at a party last weekend, and the hostess brought out a tray of homemade ice cream sandwiches at around 10pm.

Seriously, I could have eaten a dozen- it was the perfect sweet treat on a hot summer night. I think I might copy the idea for my next party, and use homemade-ish chocolate chip cookies and my favorite ice cream. The key to a party-worthy ice cream sandwich is rolling the exposed ice cream in sprinkles, candies or something else divine.

Store-bought chocolate chip cookies just can’t compare to homemade, so I used King Arthur Flour baking mix that I received in my DegustaBox this month, which is a food subscription box that only costs $19.99. LOVE the fact that this mix has no artificial anything- they basically are making sure that I haven’t run out of flour at the last minute as per usual. My kids love baking along with me, so this makes even less of a mess than getting out every individual ingredient.

I paired my Chocolate Chip Cookies with Strawberry Ice Cream, and rolled the edges in Mini Chocolate Chips. Love the combo of Chocolate, Sugar and Strawberries!
