Spring Sips: Spiked Peach Iced Tea

Although I despise the drab, gray winter to spring transition, I am thankful to live in the Midwest where we can celebrate the change of seasons with a change in cocktails! Oh, don’t tell me I am the only one that does this. Spring means fruit, tea, mint, fresh. I whipped up this Spiked Peach Iced Tea in a minute, and it only contains two ingredients.

First of all, I am not a tea lover. I have TRIED a million times with a myriad of flavors…but to me, most taste like potpourri. I received this Skinnygirl Peach Bellini Green Tea in my Degustabox this month, and of COURSE the only tea I like is inspired by cocktails. I don’t have to even heat water- I pop the pod into my Keurig and BAM- instant tea. It comes already sweetened, but since it is Skinnygirl brand they use Stevia extract.

In order to make it iced tea, reduce the size on your Keurig in settings (I do 6 oz.), brew and pour over ice.

I added a shot of Deep Eddy Peach Vodka to the mug after the tea has chilled. You can also use their Sweet Tea Vodka if you want the tea flavor to stand out. If you haven’t jumped on the Deep Eddy train, you are truly missing out on an amazing naturally flavored vodka. My fave? Ruby Red with Pamplemousse LaCroix. The ideal lower cal cocktail for summer.

Add a little lemon to balance the sweetness.

In addition to the ice, I add frozen peaches that I buy from Trader Joe’s- keeps the drink cold, and they are a fabulous treat at the end!
