4 Ingredient Elegant Summer Appetizer- Genovese Palmiers

When I throw a party, I am always on the hunt for appetizers that are simple, elegant, and can be eaten without utensils. This is especially true in the summer, when guests are mingling on the patio and balancing a specialty cocktail in one hand. I can’t WAIT to host evening parties, lit by candle light and Edison cafe bulbs, with guests lounging in sweeping maxi dresses and crown braids. Ok, I have always had a wild imagination….but a girl can dream, and summer is all about the al fresco fête.

Here are the most simple yet elegant appetizers for your summer soirees, and they are fairly foolproof. Genovese Palmiers

Ingredients:

1 package puff pasty sheets, thawed
1/4 cup prepared pesto
1/2 cup feta cheese
1/4 cup finely chopped sun-dried tomatoes

Preparation:

Lay a puff pastry sheet on a floured surface and spread 1/2 of the pesto over the surface, stopping a bit short of the edges. Sprinkle 1/2 of the cheese and tomatoes over the pesto, and roll the pastry in from both sides. Repeat with another pastry sheet and ingredients. Cover with plastic wrap and refrigerate for 45 minutes. 

 
Heat oven to 400. Cut pastry rolls into 1/4 inch slices and place cut side down on baking sheet lined with parchment paper. Bake until golden brown, approximately 15 minutes, turning midway through. Cool on a rack and serve.

Serve these with a charcuterie platter, a Rossini (strawberry juice + brut) or an Aperol Spritz (Aperol + prosecco + seltzer).

Strawberry puree with a dash of sugar; mix and add to brut!
