Thanksgiving Turkey Salad Sandwiches

I am all about EASY during the holiday season. Ok, every season. I am hosting an early family Thanksgiving today and bought the biggest turkey that Peapod offered. Why? Because…go big or go home. And I don’t mind eating leftover turkey- I am pretty fabulous when it comes to re-purposing leftovers so I don’t have to cook again.

I received a bottle of Brianna’s Poppy Seed Dressing in my Degustabox this month. I always discover something different that I end up purchasing again. Here is everything I received in my November box- my favorite was the Torani K-cup pods because COFFEE. (Some boxes had the balsamic vinegar as opposed to coffee; both are delish)

I came up with a twist on the Chicken Salad Sandwich by swapping out the chicken for turkey and making sure some elements of a traditional Thanksgiving dinner were tossed in for good measure (cranberries, anyone?). Make these next week on Friday or Saturday for lunch…or a late night snack because your kids refused to actually eat their dinner like mine usually do. If you are traveling, put lettuce leaves on the top and bottom between the bread and the salad to keep it from getting soggy.

Adjust ingredients to taste as with any recipe- don’t add all the cranberries if you don’t want, leave out the green onions, it is up to you! I love adding stuffing to a sandwich- carb city, but hey, it is the most wonderful time of the year for a reason!
