Spring Treats and Eats- Houston

Spring is so close you can taste it, so I’m rounding up my favorite spring treats and eats for the end of March. From ice cream to iron, energy bars to protein-packed nuts, these are my favorite finds!

Wonderful Pistachios

In the spring, I love to grill out and make salads from the fresh ingredients emerging from the grocery store. Wonderful Pistachios are my favorite protein-packed topper for any salad- they add crunch, energy and fiber as well as a little kick when you use their newest flavor, Jalapeno Lime. Try this salad recipe:

Summer Salad with Fresh Nectarines and Arugula

Salad Ingredients

  • 3/4 cup Wonderful Pistachios
  • 3/4 cup farro
  • 1 cup low sodium chicken or vegetable broth
  • 1 cup water
  • 4 cups chopped arugula
  • 1 firm, ripe nectarine- chopped
  • 3 scallions, white and green parts, sliced
  • 4 oz. crumbled feta cheese

Dressing Ingredients

  • 1/4 cup EVOO
  • Juice from 1 lemon
  • 2 teaspoons chopped fresh thyme
  • 1/4 each teaspoon salt & pepper


  1. In a pan, combine farro, broth and water. Bring to a boil, reduce the heat to simmer, cover and cook until tender, about 25 minutes. Drain and rinse with cold water.
  2. In a bowl, toss the cooled farro, arugula, nectarine and scallions.
  3. In a small bowl, whisk the dressing ingredients. Pour over salad, toss to coat.
  4. In a dry skillet, toast the Wonderful Pistachios over medium heat for one minute. Add to salad, sprinkle feta over salad.
