Spring Must Haves- Philadelphia

Although snow is still on the ground, we are definitely heading towards warmer weather. This spring, make the transition as easy as possible with a few spring must haves.

Wonderful Pistachios

This snack is loaded with protein and fiber, but did you know that is excellent in recipes as well? Try this Pistachio Cake to ring in spring! And make sure to try their NEW flavor, Jalapeno Lime.


  • 1 1/4 cup Wonderful Pistachios, No Shell
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1 cup granulated sugar, plus 1 tablespoon
  • 1/2 cup unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 3 large eggs
  • 3 oranges, segmented, 1/2 cup juice reserved
  • 1 tablespoon honey
  • 2 cups vanilla yogurt


  1. Preheat oven to 325°F. Grease an 8″ round cake pan with cooking spray and line the bottom with parchment paper.
  2. Whisk together sifted all-purpose flour, baking powder, and nutmeg in a bowl. Set aside.
  3. Combine 1/4 cup Wonderful Pistachios and 1 tablespoon of sugar in a food processor until they are fine crumbs. Remove from food processor and set aside.
  4. Pulse remaining 1 cup Wonderful Pistachios until finely chopped and some pea-sized pieces remain.
  5. Beat butter and 1 cup sugar in bowl of an electric mixer. Add the vanilla extract, then the eggs one at a time, beating to incorporate in mixture between each egg. Beat for 1 minute after adding the last egg so the mixture is light and fluffy. Stir in flour mixture just until incorporated then stir in pulsed Wonderful Pistachios by hand.
  6. Spread batter evenly in the prepared cake pan and sprinkle the finely processed sugar and Wonderful Pistachios crumb mixture on top. Bake for about 1 hour and 20 minutes until a toothpick inserted in the center comes out clean. Let cool in pan, then gently remove.
  7. Combine reserved orange juice and honey for glaze in a small saucepan and bring to a simmer. Remove from heat and cool.
  8. Top cake with dollops of yogurt then orange segments. Garnish generously with extra coarsely chopped Wonderful Pistachios and drizzle glaze over entire cake.

Minute Jasmine Rice & Red Quinoa Cups

  • 2 cups Minute® Jasmine Rice & Red Quinoa Cups
  • 1/2 cup milk
  • 1/4 cup condensed milk
  • 1/4 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup sugar
  • Shredded coconut (optional topping)


Heat rice according to package directions.  

In a saucepan, combine the cooked rice, milk, condensed milk, vanilla extract, ground cinnamon, and salt. Cook over low heat, stirring frequently, until the mixture thickens and becomes creamy. 

Add sugar and continue cooking and stirring until the sugar is fully dissolved. 

Remove the saucepan from the heat. Transfer to a medium bowl and allow the mixture to cool completely in a refrigerator. Once cooled, start shaping the rice pudding into small balls. Wet your hands to prevent sticking.

Roll the rice pudding mixture into bite-sized balls and place them on a parchment-lined tray. If using, roll the balls in shredded coconut. Once fully coated, place the rice pudding balls in the refrigerator for at least 1 hour to firm up.
