I adore the glamor of the Kentucky Derby: the extravagant hats, the fabulous floral frocks, the seersucker and bow ties. Pair this with creative cocktails and you have the ingredients for the perfect party!
This Saturday, I am joining the lovely folks at Taste on Chestnut in Winnetka for their Kentucky Derby party. They are hosting a few fashion contests- best hat for the gals, and best bow tie for the guys with fabulous prizes.
The evening will be filled with amazing bites from their Derby-inspired menu: Watermelon & Feta cups with fresh mint, Buttermilk Biscuits, Cheese Straws, Finger Sandwiches, Bourbon Pecan Pie and more. Although this all sounds absolutely divine, I am most excited for their Julep Flights! They will be serving a trio including Mint, Pineapple and Mango. I was fortunate enough to snag the Pineapple Mint Julep recipe from them to share with you.
Ingredients:
2 1/2 ounces bourbon
1 ounce mint simple syrup
1 ounce mint pineapple puree
crushed ice
fresh mint leaves
Mint Simple Syrup
1/3 cup granulated sugar
1/3 cup water
1 bunch of mint leaves
Pineapple Mint Puree
3/4 cup fresh pineapple chunks
2 tablespoons mint simple syrup
Directions:
Combine bourbon, mint simple syrup and mint pineapple puree together and shake well. Pour over crushed iced and garnish with mint sprig and pineapple wedge.
Mint Simple Syrup
Combine sugar, mint and water together in a small saucepan and heat over high heat until boiling, stirring constantly. Reduce heat to low and cook for another minute or so, then set aside to cool completely. Remove mint before using. You can do this ahead of time and store it in the fridge
Pineapple Mint Puree
In a food processor or blender, combine pineapple and mint simple syrup until pureed.
Wondering what to wear? I say go big or stay home in the headgear department. Last year, I fashioned my own fascinator from hot pink mesh and jewel-encrusted earrings. My husband looked dapper in his three piece seersucker suit.
