Easy Summer Appetizer: Bruschetta-Stuffed Tomatoes

I am always on the hunt for new appetizer ideas- ones that are relatively healthy (yes, Totino's Pizza Rolls are delicious, but they are single-handedly responsible for the majority Freshman 15s). I love using fresh, seasonal ingredients but want minimal prep time. Also- bonus points if they can be eaten in one bite. No one wants half an appetizer dangling perilously from their mouth as they try to bite it in half!


I put this particular appetizer together because I adore bruschetta but can never figure out how to eat it with ease because the topping always slides off the toast. I thought, why not put the stuffing inside the tomato? Oh, and did I mention that I am all about easy so there isn't really any "cooking" involved?

Bruschetta-Stuffed Tomatoes with Laughing Cow Cheese

1 pint cherry tomatoes
1 wheel Laughing Cow Cheese (I used their new Asiago flavor)
1 jar prepared pesto
1 box toast rounds

Directions

Using a sharp paring knife, slice a circle out of the top of each tomato. Scoop out the inside- easiest tool I found was a baby food spoon. Mix the cheese with prepared pesto to taste, and pack into a plastic bag. Cut the tip and pipe mixture into the tomato. Add a dollop to a toast round, and stick the filled tomato on top.

Keep this recipe in mind later in the summer when your cherry tomato bushes are producing fruit by the hundreds! I keep The Laughing Cow Cheese wheels on hand because they have a fantastically long shelf life, they make a great appetizer as-is, and I can substitute them for a lot of different ingredients (sour cream, cream cheese, etc...). Another fave? Using their spreadable Swiss for stuffed mushrooms.
