Be THAT Mom...For A Day
Here's the thing: I like Goldfish crackers. My son likes Goldfish crackers. Even my DAD likes Goldfish crackers, which is frustrating when you ask him to feed them to your son and see dad snacking on your precious and dwindling supply instead.
On the other hand, I do like baking. I usually bake a batch of drool-worthy cupcakes or cookies, then send them to with my husband to work the next morning so they don't stare at me from the counter and hold me hostage.
I decided to try to be THAT mom for a day, making my own snacks for my son, but minus the pushy and judgmental attitude.
Here is what I came up with:
Cranberry Coconut Granola Bars
(I substituted dried cranberries for chocolate chips because, well, I figured I would go all in with the healthy stuff if I was headed that direction)
Result? I burned the edges of it, but the rest tasted so good I decided to save it for myself and put it on my yogurt for breakfast. Sorry kid.
Carrot Snack Sticks
Result? Almost burned these too, but saved them in the nick of time. My son loves them although they are a little bland for my taste. These are great if you are like me and buy bags upon bags of baby carrots that usually end up in a mushy mess by the time you remember them.
